Garlic Mushroom Chicken and French Onion Rice

Garlic Mushroom Chicken 1 package Chicken Breast (cut in half horizontally, and into 3 sections on each half) 2 cups flour 1/3 cup grated Parmesan cheese (mix together with flour and coat chicken evenly - see photo) 3/4 stick butter 1/4 cup olive oil 1/2 cup V8 juice 2 small cans sliced Mushrooms with liquid 2T of minced Garlic Preheat oven to 375. Heat oil and butter, cook chicken in 2 batches and place in baking dish. In the same pan, add garlic and mushrooms and after 2 minutes add V8 juice. Let simmer for a few minutes, then pour over chicken. Cover with foil and bake for 20 minutes. French Onion Rice 3 cups Brown Rice 1 packet French Onion 1 can Tomato with Green Chiles 2 cans of water using tomato can Bring to a boil, reduce heat and let simmer for 30 min.
